This recipe is ideal when you crave for something delicious & filling but do not have enough time for cooking or when you are just lazy to spend your morning/evening in the kitchen. We usually have it for dinner when I run out of time for cooking as it doesn’t consume much time. I’ll name it as Bread Egg Masala. You can also call it Bread Kottu because it’s much similar to kottu, BUT – with bread.
*KOTTU -A traditional Sri Lankan/Indian dish made of chopped parata mixed in veggies, meat per choice & a spicy gravy packed with flavour.
INGREDIENTS (Recipe makes for 02)
09 slices of brown bread cut into small cubes (Any bread will do. I usually use brown bread)
1 tsp of ginger paste
1 and 1/2 tsp of garlic paste
1/2 a medium sized onion – finely chopped
1 small ripe tomato or half a big tomato – cut into cubes
2-3 slit green chillies – You can use more according to your palette
06 tbsp of oil
02 eggs (As per your choice)
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp pepper powder
02 tbsp of curry powder (Curry powder – An Asian mixture of spices which consists of coriander,cumin,fennel,dried curry leaves,turmeric,etc.)
Salt to taste
Some chopped fresh coriander leaves for garnishing
